La Chinata Single-variety Manzanilla Cacereña is the juice of olives of Manzanilla Cacereña variety, harvested in the Sierra de Gata region, in the northwest of the province of Cáceres. In this area, we harvest only those olives that have the properties we think are essential to obtain a very high quality Extra Virgin Olive Oil. Olives are early harvested, which allows us to produce a higher quality EVOO and thus guarantee the preservation of its organoleptic properties.

Manzanilla Cacereña is the most outstanding variety of the Gata-Hurdes DOP and is found mainly and almost exclusively in the North of Cáceres.

This single-variety oil is made from 100% Manzanilla Cacereña olives, resulting in one of the best EVOOs, due to its high oleic acid content  (78-80%) compared to the rest of EVOOs (55%-80% of oleic acid).

On the other hand, it has a very balanced flavour between spicy, sweet and bitter. And given the characteristics of this variety of olives, which have a low fat yield to produce oil, its elaboration process is more expensive than other varieties’ one.

Manzanilla Cacereña EVOO, apart from being the most distinctive EVOO from the north of Extremadura, is a versatile variety, ideal for all kinds of culinary preparations.
