On one hand, red pepper is a source of provitamin A (Beta carotene and cryptoxanthin) that our organism transforms into vitamin A. It also has vitamins from groups B, C and E. And, among the minerals, potassium and, in lower proportion, magnesium, phosphorus, and calcium are present. It is also a great antioxidant.
On the other hand, eggplant is rich in potassium, copper, folic acid, magnesium and fibre. It also includes caffeic acid and chlorogenic acid that have great properties to fight against cancer, viruses, cell damage and harmful bacteria. Besides, it is also an antioxidant, reduces cholesterol, improves circulation and prevents heart and cardiovascular diseases.
